Cold-smoked reindeer with creamy scrambled eggs
Soft, creamy scrambled eggs with sweet onion, piled onto greens and draped with cold-smoked reindeer. A weekend breakfast that looks like a restaurant plate.
Instructions
Whisk the eggs with the cream, salt and pepper. Melt the butter in a skillet over medium heat, soften the diced onion for 3–4 minutes and lift it out. Turn the heat to low, pour in the eggs and, as the edges set, push the cooked egg gently towards the middle, tilting the pan so the loose egg runs underneath. Keep going until the eggs are just set but still glossy, then fold the onions back in for a final minute.
Spread the salad greens over a serving platter and spoon the creamy eggs over them in a loose nest. Drape the cold-smoked reindeer slices on top, then scatter the cherry tomatoes, cucumber and parsley around the plate.
Tips
- A pinch of smoked paprika in the eggs is worth trying.
- For brunch, a thread of good balsamic glaze over the plate works beautifully against the smoke.
