Cold-smoked reindeer
Reindeer dumplings with ginger and scallion
Smoked reindeer, Napa cabbage, ginger and scallion folded into dumpling wrappers, fried crisp on the bottom and then steamed in the same pan.
Instructions
Mix the smoked reindeer, shredded cabbage, scallions, ginger, garlic and oyster sauce in a large bowl.
Work it together until evenly combined, then taste a little and adjust the seasoning.
Now fold them, one at a time.
Put about a tablespoon of filling in the middle of a wrapper, wet the edge with water, fold it into a half-moon and pleat the edge tightly so nothing can escape. Repeat until you run out of filling or patience.
Heat the oil in a large non-stick skillet over medium-high heat and set the dumplings in, flat side down and not quite touching.
Fry them 3–4 minutes, until the bottoms are golden and crisp. Pour in the cup of water, cover the pan straight away and steam 2–3 minutes, until the water has nearly gone. Take the lid off and let the last of it cook away.
Get them to the table hot, straight from the pan.
A dipping sauce of soy with a little chilli oil, and wasabi if you like it, is all they need.
Tips
- Cooking the garlic and ginger in a little oil before they go into the filling softens their bite.
- If you can't find wrappers, circles cut from puff pastry will do, though you'll end up with something quite different.
