Reindeer tortillas with guacamole

Reindeer seared fast with cumin and folded into warm tortillas with peppers, cheddar and a bowl of guacamole made while the pan heats up.

Instructions

  1. Make the guacamole first: blend the avocado, tomato, coriander and chilli until smooth, fold in the spring onions, season and chill it.

  2. Cut all the peppers into thin strips, keeping a few rings back for the top. Chop the onion and chilli and crush the garlic.

  3. Heat 4 tablespoons of oil in a large pan and cook the onions over medium heat until soft but not browned. Add the garlic, chillies, peppers and coriander and cook 4 minutes, then tip everything into a bowl.

  4. Season the reindeer with cumin and pepper. Get 2 tablespoons of oil very hot in the same pan, add half the meat with a pinch of salt and sear it 1–2 minutes. Do the second batch the same way, then stir the meat into the vegetables.

  5. Warm the tortillas. Lay down lettuce, then the meat and peppers, scatter over the cheddar and fold. Finish with the reserved pepper strips and rings.

  6. Serve with spoonfuls of sour cream, the guacamole and nachos alongside.
