Cold-smoked reindeer and halloumi batter bake
A simple batter rested in the fridge, then baked with cold-smoked reindeer and halloumi on top until it puffs and the cheese caramelises.
Instructions
Whisk the oat milk, eggs, flour, melted butter and salt together in a large bowl until completely smooth, then season well with black pepper.
Cover the bowl and chill it for at least an hour. The rest lets the flour hydrate, which gives you a better texture.
Heat the oven to 200°C (390°F) and grease a deep rectangular dish.
Pour the chilled batter in, scatter the cold-smoked reindeer evenly over the surface and lay the halloumi slices across the top. Bake 25–30 minutes, until set and the cheese is golden and caramelising at the edges.
Tips
- Swapping half the oat milk for unsweetened cream makes it noticeably richer.
- If you're using sliced reindeer rather than mince, lay the slices straight onto the batter before the halloumi goes on.
