Cold-smoked reindeer Caesar salad
A Caesar with cold-smoked reindeer worked into the dressing as well as scattered through the leaves, so the smoke runs all the way through.
Instructions
Whisk the egg yolks with the mayonnaise, Dijon, garlic, lemon juice and olive oil until smooth.
Stir the finely diced cold-smoked reindeer through it, then season generously and taste. It should be creamy and unmistakably smoky.
Put the baby greens and the sliced cold-smoked reindeer in a large bowl.
Spoon over about half the dressing and turn everything gently, then add the rest a little at a time until the leaves are lightly coated and you can still see the meat.
Pile the salad onto four plates.
Scatter the croutons over the top for crunch and serve straight away, while the leaves are still crisp and the croutons haven't softened.
Tips
- Toast the croutons in a dry pan with a little olive oil just before serving; they're much better warm.
- For a lighter dressing, leave out the yolks and mayonnaise and use plain Greek yogurt instead.
