Reindeer and potato bake with smoked cheese
Sliced reindeer seared quickly and laid over potatoes and onions, then baked slowly under cream and cheese until the top caramelises.
Instructions
Heat the oven to 200°C (390°F) and grease a medium baking dish.
Heat the butter or oil in a skillet over medium-high heat and sear the sliced reindeer 1–2 minutes a side, just until lightly browned. It's a quick step, but it's where the flavour comes from.
Arrange the sliced potatoes and onions in an even layer in the dish, overlapping them so they hold together.
Spread the seared reindeer over the potatoes and onions and season well with salt and pepper, then scatter the halloumi over the top.
Pour the cream evenly over everything and bake 45–55 minutes, until it's bubbling and the cheese has gone golden and caramelised at the edges. Let it rest 10 minutes.
Serve it hot with chives or parsley over the top, and a green salad or some roasted roots alongside.
Tips
- A tablespoon of Dijon whisked into the cream before it goes over the dish lifts the whole bake.
- For a firmer cheese layer, use half halloumi and half Gruyère.
