Sliced reindeer
Reindeer and halloumi melts on flatbread
Sliced reindeer folded through a peppery cream, spread on flatbread with halloumi and red onion, then griddled until the cheese turns golden.
Instructions
Whisk the cream, cider vinegar and black pepper together in a small bowl, then fold in the sliced reindeer until every piece is coated. Add a little salt.
Lay the flatbreads out and spread the creamy reindeer over each one, leaving a small border. Add a slice of halloumi and a few rings of red onion.
Heat a griddle or skillet over medium heat and lay the flatbreads on. Cook 3–4 minutes a side, until the halloumi is golden and softening and the edges of the bread are crisp; the cream underneath should be warm through.
Move the melts onto a platter, scatter over the chives or dill straight away and serve with pickled red cabbage or onions for a sharp contrast.
Tips
- Searing the halloumi slices first adds a smokier note.
- If you'd rather a closed sandwich, build it on toasted sourdough instead.
