Creamy reindeer and potato soup
A thick, comforting potato soup with salted reindeer and a spoonful of cream cheese for body. The kind of pot you put on when the wind picks up.
Instructions
Peel the potatoes and the onion.
Chop the onion fine and cut the potatoes into small, even cubes so they cook at the same rate.
Melt the butter in a heavy soup pot and soften the onion for a minute or two.
Add the reindeer and let it brown properly; you'll smell when it's ready. Season with salt, then lift out a spoonful of the meat to finish the bowls with later.
Pour in the stock and add the potatoes.
Bring it to a boil, turn the heat down and cook for about 10 minutes, until the potatoes are just starting to give.
Stir in the cream cheese.
Keep stirring until it melts completely and the broth turns velvety, then let the soup come back to a gentle boil.
Season with the crushed green peppercorns and taste.
Ladle into warm bowls, scatter the reserved meat over the top and finish with microgreens or a few chive stems.
