Savoury reindeer and paprika muffins
Soft savoury muffins with cold-smoked reindeer, red pepper and smoked paprika running through them. Good warm, better with butter.
Instructions
Whisk the wet ingredients together first.
Beat the sour cream, eggs, milk and baking powder in a large bowl until smooth, then whisk in the flour a little at a time until there are no lumps left. Season lightly with salt and pepper.
Fold in the diced cold-smoked reindeer, red pepper, parsley and smoked paprika until they're evenly spread through the batter, and stop as soon as they are; overmixing makes the muffins tough.
Heat the oven to 200°C (390°F) and grease the muffin tin well.
Divide the batter between the cups, filling each about two-thirds.
Bake 18–22 minutes, until golden on top and a skewer comes out clean. Let them sit in the tin 5 minutes before turning them out onto a rack.
Tips
- A pinch of dried thyme alongside the parsley is a good addition.
- They're lovely with a peppery rocket salad and a glass of something crisp and white.
