Reindeer and potato skillet bake
Everything in one cast iron pan: cubes of reindeer tenderloin, potatoes, sweet onions and a handful of peas thrown in at the end.
Instructions
Heat the oven to 200°C (390°F).
Toss the cubed potatoes with a tablespoon of the oil, salt and pepper in a large bowl, and toss the sliced onions with the other tablespoon in a separate bowl.
Get a large oven-safe skillet hot over medium-high heat; cast iron is ideal here.
Season the reindeer cubes generously and sear them in batches until browned all over, about 3–4 minutes. Lift them out and set them aside.
Turn the heat to medium and spread the potatoes across the skillet in an even layer.
Add a couple of tablespoons of water or stock to get a little steam going, then bake 20 minutes, until the potatoes start to soften. Take the pan out and scatter the onions and seared reindeer over the potatoes.
Back into the oven for another 15–20 minutes, until the potatoes are tender and everything is golden.
In the last 5 minutes, scatter the frozen peas and thyme over the top and let them heat through. Taste, season and finish with fresh herbs.
Tips
- A splash of white wine over the potatoes before they bake is worth trying.
- For something saucier, whisk a tablespoon of cornstarch into half a cup of stock and pour it over in the last 10 minutes.
