Ingredients

  • 240 g Pokka Reindeer Roast Boneless

  • 1 large baguette

  • 1 tsp kosher salt

  • 1 tsp black pepper

  • 3 tbsp olive or vegetable oil

  • 3 tbsp butter

  • 1 large red onion

  • 4 slices smoked cheese

  • Salt to taste

  • Fresh salad leaves

Directions

  • Prepare the sauce
    In a bowl, mix the mayonnaise and BBQ sauce. Add salt to taste and set aside.
  • Caramelize the onion
    Preheat the oven to 160 °C for the baguette. Pour 2 tablespoons of oil into a cast-iron skillet over medium heat, add the onion with a pinch of salt, and cook, stirring frequently, until softened and caramelized. Set aside.
  • Toast the baguette
    Slice the baguette lengthwise and place the halves cut side up on baking paper. Spread 1 tablespoon of butter on each half and place the cheese slices on one side. Toast until the cheese melts, about 5 minutes.
  • Cook the reindeer
    While the baguette toasts, heat the remaining butter in the skillet. Season the reindeer meat with black pepper and kosher salt. Add the meat and sauté quickly over medium-high heat until mostly browned, about 2 minutes. Remove from the heat and mix gently with the caramelized onion.
  • Assemble
    Spoon the hot reindeer mixture over one half of the baguette. Drizzle a little of the cooking liquid on top, add extra cheese if desired, fresh salad leaves, and some sauce. Cover with the other baguette half and serve immediately with a fresh salad.
