Ingredients

  • Pokka Reindeer Topside – 500g

  • 1 tsp fine sea salt

  • ½ tsp freshly ground black pepper

  • 1 tbsp cold-pressed rapeseed oil (or mild olive oil)

  • 1 tbsp butter

  • 1 sprig fresh rosemary (optional)

  • For the Tricolor Sweet Potato Fries:
  • 400 g (14 oz) sweet potatoes (mixed orange, purple, and white varieties if available)

  • 2 tbsp high-smoke-point vegetable oil (e.g., grapeseed or sunflower)

  • 1 tsp fine sea salt

  • ½ tsp smoked paprika (optional)

  • Fresh thyme leaves for garnish (optional)

  • For the Nordic Dipping Cream:
  • 100 ml (3.4 fl oz) crème fraîche or Greek yogurt

  • 1 tsp horseradish paste

  • ½ tsp lemon juice

  • Pinch of sea salt

Reindeer Roast Directions

  • Preparation: Remove the reindeer topside from refrigeration 30 minutes before cooking to temper.
  • Seasoning: Rub the meat evenly with salt and pepper.
  • Searing: Heat the oil in a heavy skillet over medium-high heat. Sear the reindeer on all sides until richly browned (about 1–2 minutes per side).
  • Roasting: Transfer the seared meat to a preheated oven at 120°C (250°F). Roast until the internal temperature reaches 54–56°C (129–133°F) for medium-rare (approximately 25–35 minutes depending on thickness).
  • Resting: Wrap the roast loosely in foil and allow it to rest for 10–15 minutes before slicing thinly against the grain.
  • Sweet Potato Fries Directions
  • Preparation: Preheat the oven to 220°C (428°F). Peel the sweet potatoes and cut into 1 cm (⅖ inch) thick batons.
  • Coating: Toss the batons in vegetable oil, salt, and smoked paprika.
  • Baking: Spread the fries evenly on a parchment-lined baking sheet. Bake for 20–25 minutes, turning once midway, until golden and slightly crisp at the edges.
  • Nordic Dipping Cream
  • Mix: Stir together crème fraîche (or Greek yogurt) with horseradish, lemon juice, and a pinch of salt until smooth.
