Ingredients

  • Pokka Sliced Reindeer Meat – 240g

  • 4 natural Mexican tortillas (no additives)

  • 1 large onion, finely chopped

  • 1 small red pepper

  • 1 small yellow pepper

  • 1 small green pepper

  • 1–2 small fresh chilies

  • 2 garlic cloves, crushed

  • 120 g (1 cup) shredded aged cheddar cheese

  • 120 ml (½ cup) sour cream

  • 2 cups shredded romaine or iceberg lettuce

  • 1 Tbsp fresh chopped coriander

  • 1 tsp ground cumin

  • 1 Tbsp cracked black pepper

  • Kosher salt to taste

  • Nacho chips to serve

  • For the Guacamole
  • 1 ripe avocado, peeled and diced

  • 2 deseeded tomatoes, diced

  • 2 Tbsp chopped fresh coriander

  • ½ mild red chili, deseeded and minced

  • 2 spring onions, finely sliced

  • Salt to taste

Directions

  • Guacamole: Blend avocado, tomato, coriander, and chili until smooth. Fold in spring onions and season. Chill.indeer chops to room temperature.
  • Vegetable Prep: Slice all peppers into thin julienne strips (reserve rings for garnish). Chop onion, chili, and mash garlic.
  • Vegetable Sauté: In a large pan with 4 Tbsp oil, cook onions on medium heat until soft (not browned). Add garlic, chilies, peppers, coriander. Cook 4 min. Remove to a bowl.
  • Meat Searing: Season meat with cumin and pepper. Heat 2 Tbsp oil in the same pan until very hot. Add half the meat, salt, and sear for 1–2 min. Repeat with second batch. Combine with vegetables and mix well.
  • Assembly: Warm tortillas. Layer lettuce, then meat mix. Add cheddar and fold. Garnish with pepper strings and rings.
  • To Serve: Plate with dollops of sour cream, guacamole, and nachos on the side.
