Nordic Blue Cheese & Cold-Smoked Reindeer Tart

Cold-smoked Reindeer, finely diced – 150g
100 g (3.5 oz) butter
1 dl (½ cup) wheat flour
1 dl (½ cup) wholemeal spelt flour
2 tbsp cold water
- Filling Ingredients
150 g (5.3 oz) cold-smoked reindeer, finely diced
1 small red bell pepper, diced
1 small onion, finely chopped
1 tbsp oil
100 g (3.5 oz) blue cheese, crumbled
2 eggs
2 dl (¾ cup + 1 tbsp) cream
Salt and pepper
Fresh thyme for garnish
Directions
- Mix butter and flours; add water to form dough. Press into 24 cm tart pan. Chill 20 min.
- Pre-bake at 200°C (390°F) for 10 min.
- Sauté onion and pepper in oil, then add reindeer.
- Fill crust with mixture, add blue cheese.
- Whisk eggs and cream, season, pour on top.
- Bake 30–35 min. Garnish and serve.
