Cold-Smoked Reindeer Meat Groats Mozzarella Stuffed Crust Pizza

Cold smoked reindeer meat grouts – 100g
3/4 cups (180 ml) warm water
2 cups (240g) all-purpose flour (00 flour)
7 g dried yeast
1 tablespoon granulated sugar
spoon salt
3/4 tee spoon salt
1 tablespoon Extra virgin olive oil
- Sauce Ingredients
2 garlic cloves, squashed
400 ml smashed tomatoes
- Topping Ingredients
150 g grated mozzarella
100 g pizza cheese
- Optional: Blue cheese
- Crust
125 g Mozzarella cheese cut in long sticks
Directions
- Ad the yeast in a warm water (42-43 degree Celsius). Add half of the sugar and mix well. Let relax the mixture in a warm place for about 10 minutes or until you see bubbles forming in the mixture.
- In a stand mix add the remaining dry ingredients (half of the sugar, flour and salt). Mix a very low speed and add the yeast mixture. Increase to medium speed until the dough comes together in a bowl (about 7 minutes). Flour a work surface with a little corn flour and knead the dough until it is smooth and spring back when pocked. Cover a large bowl with extra virgin olive oil. Make a a dough ball, coat it with extra virgin oliva oil and place it in the bowl. Cover the bowl with plastic wrap and place in a warm draft-free place to rest for about 1 hour or until the dough has doubled in size.
- Pour the extra virgin olive oil into a saucepan and add the squashed garlic, mid brown the garlics and add the smashed tomatoes oregano and a pinch of sugar. Season well and simmer for 5-10 mins, until the sauce is thick. Remove the garlic cloves and set aside until you’re ready to assemble the pizza.
- When the dough has doubled, place it in the work surface and press it down to remove the air. Shape into a disk a use 125g of the mozzarella to create a ring around the outside edge of the pizza base, leaving 1/2cm gap between the edge. Brush a little water inside the mozzarella ring then fold over the outside edge to enclose the mozzarella and create a stuffed crust.
- Spoon the sauce over the middle of the base and top with the grated mozzarella and pizza cheese and blue cheese.. Scatter the cold-smoked reindeer grouts and decorate with tomatoes cherrie or tomatoes slices. Brush the stuffed crust with a little oil, then lightly cover with oiled cling film and set aside for 20-30 mins, until the dough has puffed up a little. Meanwhile heat oven to 240C/220C fan/gas 9 with a large baking sheet on the middle shelf to heat up. Once the oven is hot and the pizza dough has puffed up, slide the pizza into the oven. cook for 15 mins, or until bubbling and cooked through.
