Ingredients

  • Cold-smoked reindeer crumble – 50g

  • 1 round Italian bread (approx. 549 g) or any round loaf

  • 400 g grated mixed cheese (such as Gruyère, Gouda, Edam, Raclette, or other mature cheeses)

  • 50 g blue cheese

  • 150 g cream cheese

  • 3 tbsp butter

  • 250 ml heavy cream

  • 2 tbsp cornstarch (if needed)

  • Freshly ground black pepper to taste

Directions

  • Prepare the bread bowl.
    Cut off the top of the bread and hollow out the inside, leaving about a 1-inch thick wall. Cut the removed bread into cubes and set aside. Turn on the oven’s grill function.
  • Grate the cheeses.
    Remove any rinds and grate all the cheeses.
  • Make the fondue base.
    Pour the cream into a saucepan. Gradually add the cheeses while stirring until the mixture starts to bubble gently. Season with black pepper. Turn off the heat and stir in the cold-smoked reindeer crumble.
  • Bake.
    Pour the cheese fondue into the hollowed bread bowl and grill it in the oven on low heat for about 10 minutes. Toast the bread cubes in a pan with butter until golden.
  • Serve.
    Remove from the oven and serve the reindeer fondue with toasted bread cubes, crackers, and a fresh salad.
