Crust Ingredients

  • Cold-smoked Reindeer, finely diced – 150g

  • 100 g (3.5 oz) butter

  • 1 dl (½ cup) wheat flour

  • 1 dl (½ cup) wholemeal spelt flour

  • 2 tbsp cold water

  • Filling Ingredients
  • 150 g (5.3 oz) cold-smoked reindeer, finely diced

  • 1 small red bell pepper, diced

  • 1 small onion, finely chopped

  • 1 tbsp oil

  • 100 g (3.5 oz) blue cheese, crumbled

  • 2 eggs

  • 2 dl (¾ cup + 1 tbsp) cream

  • Salt and pepper

  • Fresh thyme for garnish

Directions

  • Mix butter and flours; add water to form dough. Press into 24 cm tart pan. Chill 20 min.
  • Pre-bake at 200°C (390°F) for 10 min.
  • Sauté onion and pepper in oil, then add reindeer.
  • Fill crust with mixture, add blue cheese.
  • Whisk eggs and cream, season, pour on top.
  • Bake 30–35 min. Garnish and serve.
